Aqua is a fine dining restaurant that lives up to its name. Everything about Aqua is fresh, cool and filled with the zest of young chefs who don't mind creating new flavours for old favourites. What's more it overlooks the swimming pool with its cabanas with billowing white muslin curtains. For starters you can try a delicate slice of pale pink Foie Gras that has been placed on a thin slice of toasted Brioche, with a sliver of caramelized peach by the side and drizzled lightly with aged balsamic vinegar. At Aqua it's the fish that gets pride of place. You can either opt for their classic Seafood Platter, or request for a Baked Fish Parcel of John Dory tied into a parchment paper and baked in their own juices. Even the accompaniments pasta stuffed with mushrooms and most subtle of all butter flavoured with truffles with thin stems of al dente green beans seem just perfect for those who like European food with a twist. Vegetarians have an equally arresting option - small parcels of Phyllo Pastry stuffed with baked spinach, pine nuts and a tangy garlic mayonnaise sauce. They change their menu for dinner every three months, so expect something different every time. In addition, Wednesdays at Aqua are even more special with a weekly barbecue festival featuring delicacies like Whiskey Flambeed Chicken, Pork Chops and Lobster with Cajun Marinade. And if you are here on a Wednesday then you enjoy all these delicacies while listening to a live band play by the languid pool.rn
