A republic is a form of government that has supreme control over - in this case 'the noodle'. It is a well known fact that the noodle migrated to various parts of the Far East and here is the Republic of Noodles which has created a sort of government to create an experience like none other, with South East Asian fare from Thailand, Vietnam, Singapore, Indonesia and Burma. Take a look at what is on offer - the Char Kway Teow, Malaysian style stir fried seafood with flat rice noodles, Phad Thai - a dish of stir-fried rice noodles with egg, fish sauce, tamarind juice plus any combination of shrimp, chicken or tofu, and Thai condiments, the Bamee Goreng, Indonesia's famous stir fried wheat noodle or the chef's own fusion of Glass Noodles with our very own Balchao sauce. Besides the noodles there are a host of other preparations to try. For starters try the Barbequed Honey Glazed Pork Spare Ribs with honey sauce or the Spare Ribs. For mains try the Fiery Sri Lankan Fish Curry with red tomatoes, or the Singapore Chilli King Crab with bell pepper. Perhaps the taste buds could be craving for a Minced Chicken with chilli garlic and basil? The spice really works wonders to the salivary glands. This far eastern food theatre has stir-fries and clay pot dishes with curries from the various regions that are not typical of what you might find in other restaurants. Would you like to know how far the noodle can stretch? You will need a breather after all that food. However, there is always room for expansion for the Fried Ice-cream with caramel sauce. Remember the word republic is also derived from a Latin phrase 'res publica' translated as 'a public affair'. This experience is definitely an 'affair' for the public to remember.

Covering the entire Pan Asian cuisine Republic of Noodles is really doing a wonderful job for people like me. I love Asian cuisine and that is why most of the time I can be found lazing in this restaurant. This place has almost all sorts of noodles prepared in an authentic manner. For me Phad Thai and Malasyian Style stir fried seafood along with flat rice noodles are anti depressants. The Sri Lankan Fish curry is also an amazing preparation and displays the mastery of the chef. Republic of Noodles is a nice place for nice food in Goa.

I liked the name of the place and decided to visit it. I was very impressed the way the ambience was done. The food and drinks added to my delight. This place is surely a must visit.
