Masala is the Indian speciality restaurant at Park Hyatt in South Goa. The focus is on North Indian and Mughlai food, with the authentic Tandoori Chicken and kebabs like Tandoori Pomfret, Murgh Kesari Tikka, Gilafi Seekh Kebab being hot favourites with the foreign tourists. There's also Butter Chicken, the rich tomato-butter-cream gravy from Punjab, a robust Mutton Biryani, which is basmati rice cooked with lamb and many other offerings from North India. Gourmets should try the rare Massa ke Sule, a spicy lamb speciality from the deserts of Rajasthan. Also recommended are the Dal Masala - black lentil curry topped with cream.

For authentic north Indian Mughlai food there are only a few destination in Goa and Masala is a landmark in terms of authenticity of cuisine. Inside Park Hyatt this restaurant has perfect set up and staff to guide one through the food menu. If I have a guest coming from outside the town I prefer taking them to this restaurant and treat them with Butter Chicken, Murgh Kesari Tikka and Biryani of this place. For something totally different I order Massa Ke Sule, a delicacy from Rajasthan. Masala is Indian food in western style establishment.
