Where can you get the essence of Goa literally in the palm of your hand? Blue skies, tranquil seas, miles of sand, seafood to tantalise your tastebuds, and spirits to buoy up your mood.....it is at the Palms, the place for seafood at the Park Hyatt right on the beach. And when the sun is at its zenith, it is time to chill down with a refreshing spirit and feast on appetisers. Feta, Watermelon and Shallot Salad with honey and lime dressing or perhaps a Lobster and Zucchini Salad with orange and extra virgin olive oil emulsion. But seafood holds the promise for the day. Try the Pan Fried Scallops with mango and cranberry dressing, served with tropical salad and char-grilled pineapple. The Tiger Prawn on Lemongrass Skewer with pickled ginger and sweet chilli sauce holds the key to oriental secrets as will the Fish Satay with tomato-chilli jam. If you want a crunch for the midday munch then the Crisp Fried Calamari served with roasted garlic aioli should be the choice. There is fresh seafood on the boat cooked on a charcoal griller as well. As the sun slowly sinks below that horizon, feast on a choice of whole spiny lobster, tiger king prawn, snapper, Sea bass — the seafood has a very simple marination of salt, pepper and olive oil and served with the accompaniment of herb-garlic butter, tomato relish and spicy green masala sauce. Cool off those digestive churnings with Vanilla Roasted Pineapple with ginger ice-cream or the Chocolate Delight. Come Friday night and the chefs are out at dawn to bring in a seafood bonanza. Fishy flavours and crustacean cravings, unlimited at a fixed price...all in the palms is in your hand.
