Think of Kolkata Biryani and a plateful of this preparation of biryani prepared by Shiraz comes to the mind! It is because of Shiraz that the humble potato has become an integral part of the Mughal treat of rice and tender meat that was fit for the blue-blooded. The other immensely popular and delicious dishes are their chaanp (Irani Chaanp), kebabs, Tandoori Chicken, Mutton Rezala, Fish Pudina, Fish Afghani and korma. Although some people feel that Shiraz is not as good as it once was, it is still as unique as it was many years ago, and they now have several branches and outlets all over the city.

Shiraz is one of the older mughlai restaurants in the city and is quite famous for its biryani. In its heydays it served awesome biryani and even today though not as fantastic they serve one of the better biryani's around. What is not too consistent is the quality and size of the mutton portion served in their mutton biryani ... at times its soft and well prepared at others its stringy and dry. My usual order would be the mutton burra kabab , chicken chaap and mutton biryani washed down with a firni. Also their tikia kebab and tandoori / roomali roti is a pretty nice combination.
