The Kolkata Biryani is synonymous with very few restaurants, and Shiraz is one of them. In the last thirty years, this restaurant has made the very ordinary potato an integral part of the Mughal treat of rice and tender meat that was fit for the blue-blooded. The Shiraz chaanp, kebabs and Tandoori Chicken are as famous. The menu also features Irani Chaanp, Mutton Rezala, Fish Pudina, Fish Afghani and korma. It has changed its location to across the road (new white interiors, familiar Kolkata scenes mounted on the walls and same old smiling waiters) and nothing much has changed on the menu... yet, the food lacks the old zing. Now was it the location or the magic of the food? However, all said and done, a meal at Shiraz still remains a unique Kolkata experience. They have other counters all over the city, all fed by the same kitchen on the basis of take-away orders.
